Gin cured salmon, dressed beetroot, coriander, green apple

Pinot Gris Weka, Ohau 2014 (New Zealand)

Slow roast sirloin of Dedham vale beef, creamed potato, wilted spinach, slow cooked carrot, red wine sauce 

Paired with Malbec Reserva Piedra Negra 2014 (Argentina)

 

Dessert

 Dark chocolate mousse, winter orange sorbet, mint

Paired with Maddalena Recioto della Valpolicella 2012 (Italy)
